Its going to sense when LN2 is to low and needs to be filled or sense temperature within the pot.

Only other thing I could think of would be some sort of temperature/fluid level sensor that would open a solenoid to a dewar to fill the pot and keep it at a precise temp.

Yup. The same thing can be done with an accurate PID, a relay, and a solenoid. I tested this on a single-stage, works like a charm. Next up is a cascade, to make the lazy man's cooling even more lazy.

it will rise pot temperature when there will be a need

Its a fighting Ninja Geek Star.
